Lemon Butter Cake
as served at The Brenham House Bed and Breakfast
This recipe is very easy. I got it out of an old cookbook from my collection and I have seen it recently from a Paula Deen cookbook. Some of the best recipes have been around for quite sometime!
Lemon cake mix
1 egg
1 stick of butter, melted
Mix together and it makes a cookie dough. Press down in a 9x13 baking dish.
1- 8 oz. softened package of cream cheese
2 eggs
1 tsp. vanilla
1/4 c. lemon juice
one lemon zest
1 tsp. lemon extract
2 cups powdered sugar
1 stick of butter, melted
Mix together until creamy and pour on top of your dough.
Preheat oven to 350 degrees. Bake for 40-50 minutes ( I bake for 50 minutes)
Let cool and cut to serve. I top with fresh fruit or a little fresh cream.

This lemon butter cake looks just plain delicious. Classic recipes stand the test of time, and in this case even find their way into Paula Dean's cookbook. I especially like the fresh fruit topping; thank you for sharing this well written recipe.
