The Brenham House's Oatmeal Apricot White Chocolate Cookies

Here is one of our Brenham House Secrets!

There is so much to do around here, but we always have refreshments for our guests when they arrive, at The Brenham House.

Here is one of our favorite cookies that we make often.

Oatmeal Apricot White Chocolate Cookies
preheat oven to 350 degrees and bake for about 13 minutes.
2 sticks of butter, softened
1 c. brown sugar
1/2 c. sugar
2 eggs
t tsp. vanilla
Cream together well.
Slowly add:
1-1/2 c. flour
t tsp. baking soda
1 tsp. cinnamon
3 c. oats
1 c. chopped dried apricots
1 c. white chocolate chips
Drop cookies on a sprayed sheet and place in the freezer just until the butter hardens.
Then carefully place in bags to freeze until needed!
That is the secret!  Make ahead! 
 If I have last minute bookings I can simply pull out what I need and bake them off!
I will be making about 22 dozen cookies before Round Top Antique Festival.  It is all about being super organized!
