Give Thanks to all who Served our Country this Memorial Day

Thanks to all who served our country
for the sacrifices that have been made,
 along with the sacrifices their families have had to make as well!
Memorial Day

Our guests celebrated and gave thanks this weekend.  This morning
they were served a King's breakfast.

Fresh fruit, with cinnamon cream and chocolate mint,
Egg in the hole of whole wheat bread and toast,
parsley red potatoes,
our garden tomatoes season with fresh basil ribbons,
and to top it off lemon turnovers!
... and lots of coffee!

Scones from Scratch at The Brenham House

We make scones in many varieties.  
Anything you can dream of you can turn into a scone!
Cranberry and Orange, Cherry and Almond, Strawberry, Blueberry, Apricot

... THE POSSIBILITIES ARE ENDLESS!

Try this recipe
2c. flour, sifted
1 T. baking powder (aluminum free)
1 tsp. salt
2 T. sugar
1 -1/2 sticks of cold butter, diced
2 eggs
1/2 c. cold cream
1 c. dried fruit, diced
optional:  1 tsp.  vanilla, almond, orange or strawberry extract 

Preheat oven to 400 degrees.  In a mixer, place all sifted ingredients.  Add butter and mix on low until pea size.  In a small bowl whisk eggs and cream.  Add to the mixer and mix just until blended.  Fold in fruit.  Pour sticky dough out onto floured counter, knead a few times.  Roll out and cut scones with biscuit cutter.  Place on baking sheet with parchment paper.  Egg wash the tops and sprinkle with sugar.  Bake for 15-20 minutes.  Serves 12

Apricot White Chocolate Oatmeal Cookies

Apricot White Chocolate Oatmeal Cookies
1 1/2 c. flour
1 1/2 c. old fashioned oatmeal
1/2 tsp. baking soda
2 sticks of soften butter
1/4 c. sugar
1 c. brown sugar
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
2 eggs
1 c. white chocolate, chopped
1 1/2-2 c. dried apricots, chopped
Preheat oven to 350 degrees.  Mix flour, oats, baking soda, cinnamon, nutmeg, white chocolate apricots and set aside.  Cream butter, eggs, and vanilla.  Add dry ingredients slowly and mix just  until combined.  Drop heaping teaspoons on to cookie sheets with parchment paper.  Bake for 14-16 minutes.  Yields 4 dozen
