Vanilla Mint Fruit Cups
Vanilla Mint Fruit Cup
1/4 c sugar 1/4 c. orange juice
2 T. brown sugar 1/8 c. lemon juice
1/4 c. water 3 /4 tsp. vanilla
2 T. chopped mint
Combine sugar, brown sugar, water, orange juice, and lemon juice in a saucepan. Bring to a boil, reduce and simmer for 5-8 minutes. Remove from the heat, stir in the vanilla and set aside. Arrange fruit in bowls. Pour syrup over fruit in bowls and add some mint to each bowl. Toss gently and chill for several hours or overnight.
Serves 4 ( double for 8-10) Great with any fruit!
I keep the different fruits in separate bowls overnight, so when I serve I can put equal amounts of each fruit in the individual cups.
