Fresh Apple Spice Cake at The Brenham House

Fresh Apple Spice Cake
                                1 c. vegetable oil                                     1 tsp. nutmeg
                                2 c. sugar                                                1 tsp. vanilla
                                3 eggs                                                     1 c. pecans, chopped  
                                3 c. flour                                                 3 c. green apples, peeled and finely chopped 
                                1 tsp. baking soda
                                1/4 tsp. salt
                                1 tsp. cinnamon
Preheat oven to 350 degrees.  Grease a 10 inch tube pan.  
Combine oil and sugar; beat well.  Add eggs one at a time, beating well.  Combine flour, soda, salt, cinnamon, and fresh nutmeg in another bowl and then add in slowly while mixing.  Add vanilla, pecans, and apples.  The batter will be very thick, because the apples will add liquid as they are baked.
Pour into the prepared pan and bake for 1 hour.

Glaze:  1/2 c. sugar, 1/4 c. buttermilk, 1/4 tsp. baking soda, 2 T. butter, and 1- 1/2 tsp. vanilla. 
Combine all ingredients in a sauce pan and bring to a boil.  Boil for 4 minutes stirring occasionally.
